Come and learn how to make your favorite fermented foods. From vinegar to yogurt to dill pickles we’ll cover it all. Participants will be sent home with a ferment.

Learn all about what koji is and how to use it. We’ll cover miso, amazake, shio-koji, soy sauce, and sake plus new and modern applications. All participants will be sent home with koji spores.
